Watermelon

Watermelon is one of my favorite things to eat.  Cold, sweet and juicy!!  As a kid it was great to eat a big slice of watermelon but now I prefer my watermelon a bit more compact.

Today I am posting two ways to cut a watermelon.  The first way is done in long pieces which is great for kids.  The other way is done in chunks - great for those like me.

Watermelon


One of the most refreshing things to eat in the summer is watermelon.  It is cold, wet and sweet.  Ummmmm good!

One can have watermelon by the piece, cut up or in pops!
Try the recipe for spiked watermelon pops.  Great adult treat or substitute the alcohol with orange juice so the kids can share.
 


 
 
Recipe: Spiked watermelon pops

Ingredients
 

 
 
1/2 (3 pounds) large watermelon, peeled and cut into 1-inch chunks
1/4 cup sugar
3/4 cup watermelon flavored 70 proof vodka (Recommended: Smirnoff Twist of Watermelon)
1/2 cup chopped fresh mint leaves
Special equipment: 16 (1/4 cup) popsicle molds, 16 popsicle sticks or wooden coffee stirrers at least 2-inches longer than the popsicle molds.


 
 
Preparation
 
In a blender, combine the watermelon, sugar and vodka. Blend until the mixture is smooth. Add the mint and pulse once to combine. Pour the mixture into the popsicle molds. Insert the popsicle sticks all the way inside the molds. Freeze for at least 10 hours or preferably overnight.
To unfreeze the popsicles, insert the molds in hot water for 5 to 10 seconds. Serve immediately.
Note: For non-alcoholic watermelon pops, substitute 3/4 cup orange juice for the vodka.
