Although I never had the chance to meet him, today I am going to pay tribute to Joe Zachary. Why? Because he made the most delicious bread and passed the recipe down to his family. His family includes Kathy, my great pal. Kathy tells me that the bread has always been named "Joe's Dilly Bread" but I have renamed it to "Kathy-Joe's Dilly Bread" to honor my friend as well.
microwave for one minute
¼ C warm water
1 C small curd cottage cheese
2 T sugar
2 T minced onion
2 TS dill seed
1 TS coarse salt
¼ TS baking soda
2 C bread flour
1 ea egg
Mix the ingredients together and let rise in covered bowl until double in size.
Punch down the dough and then place in greased and floured bread pan. Cover and let rise for 30-40 minutes.
Bake at 350 degrees for 30-40 minutes.
Remove from oven and spread with some butter and salt on top.
Eat.
By the way, I am eating a piece of the bread as I write this. Hmmm good!

I made this bread in the breadmaking machine and it was perfect. I used the setting "Regular Light".
Kathy, please correct me if any of the recipe is incorrect. I copied it from scribbles when you gave me the recipe over the phone.
